Salary Watch - Restaurants
This sector is still undergoing growth across the board, but particularly in the non-branded restaurant sector with some strong independent restaurants proving extremely successful. The skills shortages at the junior end of the market continues to be a feature, inhibiting the expansion plans of many operators.
A number of ownership changes of some themed and branded chains has resulted in an inevitable amount of management restructuring, impacting mainly on area and regional managers and the support functions.
There has generally been very little significant movement in most salary bands, although the themed sector and independent units have seen bigger increases than elsewhere.
It seems that independent operators will generally offer higher salaries and are able to be much more flexible on the overall package structure. Achievable bonus has now become a much more common part of the remuneration package, which has steadied staff turnover in many areas. Until recently it was common practice for employers to "oversell" the potential bonus which, if it was then not achieved, led to disappointment in terms of annual remuneration and therefore high staff turnover.
