The UK five star market has seen a positive upturn in business over the last year with occupancy levels remaining solid, and there has been a substantial increase in levels of corporate spending. The market still remains very competitive, however, and the likelihood is that salaries at all levels will remain relatively static with little movement in the year ahead.
The 4 star hotel market has seen several new openings over the past year, coupled with a number of hotel groups upgrading their properties and restructuring their portfolios. This has lead to some small increases in salary levels countrywide, as it remains very challenging and competitive to attract the best talent when recruiting. The increase in job opportunities has also resulted in some slight increases to salary levels, but the majority of employers tend to structure payments so as to reward loyalty and achievement. Several employers have taken advantage of the newly expanded European Union and have sourced experienced chefs from Eastern Europe, who tend to accept positions at a more competitive salary level than UK nationals.
The budget hotel sector has also seen steady growth over the past six months. Salary levels have seen limited increases in certain hot spots, but generally have remained fairly static. Employers are still finding it difficult to attract quality candidates into this sector of the market.
The country house hotel market has also seen steady progress, although the traditional, small-scale, independent operators face increasing competition from the corporate chains.
